With a slower slow setting and a faster fast setting, you can easily stir your ingredients or whip them together very fast. And don't worry because your favorite pulse setting that was on the Universal is also on the Universal Plus. 14 GRAIN BREAD
In Bosch Universal Mixer with dough hook:
- 6 cups Warm Water
- 4 cups 14 Grain Blend
- 5 TBL Vital Wheat Gluten
- 2/3 cup Canola Oil
- 2/3 cup Honey
- 2 TBL Salt
- 3 TBL Dough Enhancer
- 3 TBL Saf Yeast
- 8 cups 100% Whole Wheat Flour (to start with)
Mix gently. Add Whole Wheat Flour until dough cleans the sides of the
bowl (Approx. 5-6 more cups).
Knead 7-8 minutes or until the gluten has developed.
Form into loaves (6 large).
Cover and let rise until doubled.
Bake at 350 degrees 30-35 minutes.
BIG JOHN’S BASIC WHOLE WHEAT BREAD

***Made From 100% Fresh Ground Whole Wheat***
In Bosch Universal Mixer with dough hook:
- 6 cups Warm Water
- 2/3 cup Canola Oil
- 2/3 cup Honey
- 3 TBL Saf Instant Yeast
- 3 TBL Dough Enhancer
- 2 TBL Salt
- 3 TBL Vital Wheat Gluten
- 10-12 cups Whole Wheat Flour
- (6-8 cups wheat yields 10-12 cups flour)
Mix well water, oil, honey, yeast, dough enhancer, salt, & vital wheat
gluten using momentary (M) switch.
Add whole wheat flour until dough cleans the sides of the bowl and comes
up from the bottom. Do not add more flour at this point. Dough should be
very sticky at this time.
Knead on speed (1-2) for 8 minutes or until the gluten has been
developed.
Slightly oil hands and counter and turn dough out onto counter.
Divide dough with dough divider into loaves.
Shape loaves and place in well-greased or sprayed (Pam) pans. Cover and
let rise until doubled.
Bake at 350 degrees for 30-35 minutes or until inside temperature is at
180 degrees (use Intstant Read Thermometer). Testimonials
