What can You Make With the Zojirushi BBCCX20?

You can easily make lots of things with the Zojirushi Bread Machine. From white bread and wheat bread, to cakes and jams, and dough for pizza or cookies. Here are a few of our favorite recipes:

Gluten-Free Raisin Bread

Gluten Free Raisin Bread Ingredients: 1-1/2 cups + 2 Tbsp. Water; 3 Eggs; 3 cups Brown Rice Flour; 2/3 cup Corn Starch; 1/2 cup Potato Starch; 1 Tbsp. Apple Cider Vinegar; 1/4 cup Vegetable Oil; 3 Tbsp. Xanthan Gum; 1 Tbsp. Sugar; 1-1/2 tsp. Salt; 1 Tbsp. Active Dry Yeast 

When beep sounds, add: 1/3 cup Raisins (chopped)

  1. Precisely measure ingredients and add them into the Baking Pan in the following order:
    (1) Liquids 
    (2) Dry Ingredients 
    (3) Yeast
  2. Insert the Baking Pan into the unit, close the lid and plug the cord into the outlet.
  3. Using the SELECT COURSE key, select BASIC, QUICK or HOME MADE if available. (For HOME MADE use the following cycle time: Preheat 15 min, Knead 20-30 min, Turn OFF Rise 1 and Rise 2, Rise 3 55 min, Bake 55 min.)
  4. Press the CRUST CONTROL key to select the desired course. Press the START/RESET key. When the beep sounds, add in the Raisins. (The beep will sound for 30 seconds.) Close the lid.
  5. When baking completes, press and hold the START/RESET key. Take out the baking pan using oven mitts and gently shake the loaf out. If the Kneading Blade is stuck in the bottom of your loaf, use a plastic spoon or rubber spatula to remove. Let bread cool and serve.

Luscious Blueberry Loaf

Blueberry Loaf Ingredients: 2 cups all purpose flour; 1 cup sugar; 2/3 cup milk; 1 egg; 1 teaspoon vanilla; 1/3 cup butter; 1/2 teaspoon salt; 2 1/2 teaspoons baking powder; 2 cups fresh or frozen blueberries 

Crumb Topping: 1/2 cup sugar; 1/4 cup flour; 1/2 teaspoon cinnamon; 1/4 cup butter 

Glaze: 1 cup powdered sugar; 2 tablespoons milk; 1/2 teaspoon vanilla

  1. Add milk, egg, butter and vanilla followed by dry ingredients to baking pan. Select CAKE cycle and press START.
  2. Combine ingredients for crumb topping, set aside.
  3. When mixing (kneading cycle) completes (approximately 22 minutes), fold in blueberries and sprinkle crumb topping on batter. Close lid and resume baking until complete.
  4. Remove baking pan and cool slightly on wire rack. Prepare glaze.
  5. Remove loaf while still warm and drizzle glaze on blueberry loaf to serve.

Gluten-Free Soy Walnut Bread

Walnut Bread Ingredients: 1-2/3 cups+2 Tbsp. Milk; 3 Eggs; 3 cups Brown Rice Flour; 1/2 cup Soy Flour; 2/3 cup Corn Starch; 1/2 cup Potato Starch; 1 Tbsp. Apple Cider Vinegar; 1/4 cup Vegetable Oil; 2 Tbsp. Xanthan Gum; 1/3 cup Honey; 1 tsp. Salt; 1 Tbsp. Active Dry Yeast 

When beep souds, add: 1/2 cup Walnuts (crushed)

  1. Precisely measure ingredients and add them into the Baking Pan in the following order:
    (1) Liquids 
    (2) Dry Ingredients 
    (3) Yeast
  2. Insert the Baking Pan into the unit, close the lid and plug the cord into the outlet.
  3. Using the SELECT COURSE key, select BASIC, QUICK or HOME MADE if available. (For HOME MADE use the following cycle time: Preheat 15 min, Knead 20-30 min, Turn OFF Rise 1 and Rise 2, Rise 3 55 min, Bake 55 min.)

Meatloaf Miracle

Bread Machine Meatloaf Ingredients: 1 medium onion, chopped; 2 lbs ground sirloin; 1 cup mushrooms, sliced; 2 teaspoons salt; 2 tablespoons fresh parsley, chopped; 1 teaspoon garlic powder; 1/4 teaspoon black pepper; 1 cup bread crumbs; 2 eggs, beaten 

Glaze: 1/2 cup ketchup or barbecue sauce; 1 tablespoon brown sugar; 1 teaspoon prepared mustard

  1. In a large bowl, combine all ingredients, except for glaze. Mix well. Remove kneading blades from baking pan. Press meat mixture into the baking pan.
  2. In a small bowl, combine glaze ingredients and set aside.
  3. Select HOME MADE MENU setting on the breadmaker. Press CYCLE key turning OFF the following: Preheat, Knead and Rise cycles. Select BAKE cycle. Press and hold the TIME key until the display shows 1:10 on the screen. Then press CYCLE twice to record this setting. Press START twice to begin the baking cycle. Verify that the red light on the START key is lit at this point.
  4. 30 minutes prior to end of baking time, open the lid and pour glaze mixture on top of meatloaf. Close the lid and continue baking.
  5. Once baking is completed, allow the meatloaf to cool slightly, drain juices, and remove from the baking pan. Slice and serve.

100% Whole Wheat Bread

Wheat Bread Ingredients: 2 1/2 teaspoons SAF Instant Yeast, 3 1/2 cups Whole Wheat Flour, 1 teaspoon Salt, 2 tablespoons Vital Wheat Gluten, 1 tablespoon Dough Enhancer, 1/4 cup Honey, 1/4 cup Vegetable Oil, 1 2/3 cups Warm Water, 3 tablespoons Tofu Milk Powder

  1. Put ingredients in baking pan.
  2. Select Select Quick Bread setting and push start.

Wonderful White Bread

Ingredients: 2 1/2 teaspoons SAF Instant Yeast, 3 cups White Flour, 1 teaspoon Salt, 2 tablespoons Vital Wheat Gluten, 1 tablespoon Dough Enhancer, 2 tablespoons cup Honey, 1/4 cup Vegetable Oil, 1 cups Warm Water, 1/4 Cup Tofu Milk Powder, 2 tablespoons Potato Flakes, 1 Medium Egg

  1. Put ingredients in baking pan.
  2. Select Select Quick Bread setting and push start.

14 Grain Bread

Ingredients: 1/2 cup 14 Grain Blend, 2 1/2 teaspoons SAF Instant Yeast, 3 1/2 cups Whole Wheat Flour, 1 teaspoon Salt, 4 tablespoons Vital Wheat Gluten, 1 tablespoon Dough Enhancer, 1/4 cup Honey, 1/4 cup Vegetable Oil, 1 3/4 cups Warm Water, 3 tablespoons Tofu Milk Powder

  1. Put ingredients in baking pan.
  2. Select Select Quick Bread setting and push start.
